Coconut Mango Ice Cream
Ingredients
- 3 cups coconut milk
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 1/4 cups frozen mango
- 2 - 3 Tablespoons lime juice
Directions
Puree the mango with the lime juice. Pour into a medium bowl, along with the sugar and salt. Whisk in the coconut milk. (If necessary, microwave the coconut milk for 30 seconds to melt the fat.) Cover and refrigerate overnight. Spin according to manufacturer's directions.
